Easy Basil Pesto

I literally put pesto on everrrrrrything! 🙋‍♀️

It’s an easy and tasty way to add healthy fats to meals 🍽. Here’s my basil pesto recipe that I almost always have on the go in my fridge!

Basil Pesto 🌱

Ingredients • 80g fresh basil (about 2 handfuls of leaves) • 3 cloves raw garlic • 1 cup cashews • 2/3 cup almonds • 1 3/4 cup extra virgin olive oil • 1 1/2 tsp salt

I usually soak the nuts in water for a few hours or overnight to soften them but you don’t need to if you have a strong blender or want it a bit chunkier. Just blend ingredients together and keep in the fridge for a couple weeks (if you don’t eat it by then 😂)

Remember to use a high quality extra virgin olive oil for the health benefits and flavour as some are contaminated. Sometimes I just use cashews only or add in walnuts but I rarely use pine nuts due to cost but you definitely could! If garlic makes you bloat you could try it without!

Do you make pesto?! What do you add in there? Let me know if you try this one!
